Barrel care - maintenance: The correct barrel care is extremely important in order to maintain its aroma as much is possible.For the maintainance of your barrels, it will be supposed you follow the following process :
1st step
After the barrel is empty from wine, fill it with 10-20lt of hot water (60°C-80°C).
2nd step
Rotate the barrel from side to side, in such a way that the water washes out each internal surface of barrel. Repeat the process for at least 3 times.
3rd step
For better sterilisation we use the pastille of sulphur *.
4th step
We tie up the pastille in a wire and we light the fire.
5th step
As soon as it begins to be burned, place it in the interior of barrel .
6th step
The gas that results covers the internal surfaces of barrel and it does not allow atmospheric air get in the barrel. Thus we protect the better way the quality of our barrel for the next year.
7th step
After it is changed in gas, we remove the wire with the remaining pastilla and we stamp the barrel with the bung.
8th step
We store the barrel in a cool, humid environment. Before we use it again, we tighten hoops and we follow directions for use of barrel.
